Put 3 or 4 ice cubes into an old fashion glass. Place the absinthe spoon over the glass, or a fork if you do not have an absinthe spoon. Place the sugar(sugar cubes work best) on the absinthe spoon. Slowly pour half the absinthe over the sugar and into the glass. Light the sugar on fire and let it drip into the glass as it caramelizes. After the fire goes out on the sugar pour the rest of the absinthe over the remaining sugar. Once it goes out pour the water over the spoon and stir the absinte. |
