Double the recipe and make two, amigo. Start with good tequila. At a minimum, it must be 100% blue agave. Hornitos is ok, Cazadores is great, but find your own favorite. Forget the triple sec or other liqueur: it will just mask the flavor of good tequila. Use fresh, ripe lime, either 1.5 key (Mexican) limes or half a big lime. Ripe limes are usually smoother and starting to turn yellow. They're sweeter and tastier than bright green limes. If the lime isn't completely ripe, you'll need a bit more sugar. Stir all the ingredients until the sugar dissolves. Add a dash of salt if you like. Shake over ice. Drink. Repeat.
This is the same recipe as a daquiri, so you can also start with good rum. |
