Alterations
We have found that using honey and Everclear instead of sugar and honey smooths out the concoction. Plus, we ad a couple cinnamon sticks to the jugs to give it an even better apple pie flavor.

if you put the liquor in while the concocktion is hot doesn't the heat evaporate the alcohol. duh

Don't Fret Losing Alcohol to Heat
Chemically speaking, ethanol or grain alcohol vaporizes at 173 deg F. Therefore, below about 150 deg F one should have little worry of alcohol being lost to vaporization.
