Directions: | Wash the lime and roll it on the board to loosen the juices. Cut the lime into pieces and place them in a glass. Sprinkle with the sugar and crush the pieces (pulp side up) with a pestle. Add the cachaça and stir to mix. Add the ice and stir again. |

Better Directions
wash the lime, slice it into 8 wedges, cut the pieces of the core from the wedges (this can be done after cutting the lime in half) put half the lime into an old fasioned glass or a rocks glass (8.75-9oz) put 2-3 heaped spoons of unrefined caster sugar onto the lime. Crush/muddle the lime and sugar together so that the sugar disolves into the juices and oils from the skin. fill the glass with crushed ice, fill to the top of the glass with Cachaca. **Shake well** either put an identical glass on top and hold together while shaking or push a boston shaker onto the top of the glass and shake, when done pour it all back into the original glass. This is how i always make them myself, i learned while working in bolan bar, alvor, portugal where the caipirinha is their specialty www.bolanbar.eu
